Published: July 13, 2016

Jennie Edmundson Foundation is sponsoring the “Living Well with Diabetes” Wellness Fair, which will be held on Saturday, July 23, at the Iowa Western Community College Aviation Building (near the Council Bluffs Airport).   This event is designed to increase awareness and educate the community about how to live a healthy, active life with diabetes.

The event format consists of a continental breakfast followed by the speakers. Vendor booths will be open from 8 a.m. - noon to allow attendees to visit them during and between speakers.

Speakers

Douglas Cairns

In 1989, Douglas lost his military fast-jet flying career when he was diagnosed with type 1 diabetes at the age of 25. At present the US is the only country in the world that can issue a medical license to individuals with Type 1 Diabetes to exercise full Private Pilot License privileges. He aims to show that it is possible for such licensed pilots to fly safely according to US FAA regulations. Overall, Douglas wants to show that clinical conditions such as Diabetes should not limit the scope of people's dreams. Currently he holds the World Record for an Around The World Flight (taking off and landing in Council Bluffs!) in 2010. He has also landed in all 50 states in a record time of 5 days and 15 hours. Douglas also holds five world speed records, two US transcontinental records and a record setting flight to the North Pole in 2011.

Chef Robert Lewis

Chef Robert graduated in 1976 from the Prestigios Culinary Institute of America and in 1998 he was diagnosed with Type 2 diabetes. Thus began his motivation to create great tasting dishes that are easy to prepare! He has worked with Al Roker, Richard Simmons and Lee Iacocca and is currently producing a reality TV show called “Cooking Across America”.
